A Michelin guide-listed restaurant has been given top marks for its food hygiene, reversing a shock one-star rating earlier this year.
Chef’s Table in West Malling, whose guests have included Boyzone frontman and One Show host Ronan Keating, was criticised by inspectors over poor hygiene and food storage practices following a visit in January.
However, chef and director Brad Redding says the restaurant is “committed to upholding the utmost standards” after receiving five stars upon reinspection last week.
Chef’s Table is listed in the prestigious Michelin Guide, which praises the “technical skill on show across interesting, generous dishes that reflect the locale well”.
A tasting menu at the intimate King Street venue, which opened its doors in July 2022, sets diners back £99 per person, with an extra £50 per head for a wine pairing.
It was visited by Tonbridge & Malling Borough Council (TMBC) officers on January 26 this year.
Their report noted a lack of hand washing and microfibre cloths not being washed between uses.
On food storage, goat’s cheese was found in the fridge with “considerable mould growth” while raw marinating chicken was found on the top shelf of the fridge, alongside goat’s cheese and above moulds containing petit four jellies.
In addition, a probe thermometer was used without being disinfected first.
However, when divulging the report in response to a Freedom of Information request, TMBC officers stressed that when an officer visited again just two weeks later on February 9, many issues had been fixed.
Now, following another inspection on May 9, TMBC officers re-rated the restaurant with a five, the highest rating possible.
Mr Redding, who counts Peter Andre, Made in Chelsea's Sam Thompson and Love Island contestant Zara McDermott among his previous celebrity clients, told the Local Democracy Reporting Service: “Here at Chef's Table we pride ourselves on our dedication to the highest standards of food safety and customer satisfaction.
“We would like to reassure our guests, that we will continue to maintain the highest level of standard throughout our restaurant.
“Additional paperwork for sous vide and vacuum pack methods, alongside constructional changes have been implemented as requested by the local council, with a number of external audits undertaken to ensure our practices not only meet but exceed expectations.
“Our team works hard on a daily basis to remain committed to upholding the utmost standards and are eager to showcase this to our guests and our local community.
“We value the role that food safety inspections play in ensuring public health and remain committed to upholding such standards.
“We would like to thank all our past and current guests for their continued support and trust in Chef's Table.
“We are grateful for the opportunity to serve our wonderful patrons and are eager to continue demonstrating our commitment to excellence.”
The cost of a reinspection was borne by the restaurant, in this case £213.
