Parker, whose involvement means he will miss Gills’ game against Bradford City this weekend, put his side 2-1 up.
It was Parker’s first international involvement since joining the Gills.
Ebbsfleet United's Weston then gave the team a 3-1 lead at the Sir Vivian Richards Stadium.
The match ended 3-2 and there was also an appearance off the bench for young Gillingham midfielder TJ Bramble.
Former Gills youth player Mahlon Romeo, now with Millwall, also started the match.
Antigua and Barbuda are back in action on Sunday in a friendly match against Jamaica.
