People who can never decide what to order should visit a new restaurant in Tunbridge Wells.
Twenty Six has opened for business with a blank menu which relies entirely on the head chef’s daily inspirations.
Based in Church Road, Southborough, its kitchen is led by Scott Goss, from West Malling, who was previously at The Swan in his hometown.
“The concept is 26 seats and 26 conversations. It’s very intimate,” he said.
“It is quite mysterious as we plan what we’re going to serve each day after seeing what fresh ingredients our local suppliers have in stock. Everything is local to the area.”
The married father-of-one, who appeared on Gordon Ramsay’s The F Word in 2009, described the cuisine as refined classics.
He added: “It’s really humble foods with a sharing ethos. It’s not a huge menu with about five options for each course.
“We’ve put our own take on dishes such as steak and kidney.
“We’ll cook a beautiful steak and serve it with a kidney pudding on the side, instead of having it all together.
“It’s honest hospitality and foods which I enjoy eating and cooking.”
Mr Goss said he will meet customers’ dietary requirements and will cook meat to a diner’s preference if they insist.
The restaurant is one of first ventures for his new company, I’ll Be Mother, which he has launched with Peter Cornwall and David West.
The trio worked together at The Swan, in Swan Street and their portfolio includes the restaurant at Chapel Down vineyard in Tenterden.
