Chefs from Port Lympne Hotel, The Dog at Wingham and Hide and Fox come together for a one-off dining experience

Chefs from three of Kent’s fine-dining hotspots are bringing their best eats together for one night of exceptional food.

The unique dinner will be hosted at the county’s largest wildlife park to provide a special backdrop for the one-off event.

Port Lympne Hotel and Reserve in Hythe will welcome The Dog at Wingham, near Canterbury, and the Michelin-starred Hide and Fox, along with chefs from its own award-winning hotel and restaurant.

Diners will be visit the park’s Orangery where they will take a seat and tuck into a delicious four-course menu.

Each course will be paired with a glass of English sparkling wine from Gusbourne in Appledore.

The meal will begin with canapes from The Dog at Wingham, which was named one of the Top 50 Gastropubs in the UK by Estrella. There will be a whipped cod roe tartlet, caviar and blue cheese arancini on offer.

Pub owner Marc Bridgen said: “The Dog at Wingham is extremely excited to be popping up at Port Lympne with our esteemed friends and partners.

“Head Chef Robert Mantegna has devised seasonal dishes to compliment the wonderful wines of Gusbourne. We look forward to thrilling existing and new guests”.

The canapes will be followed by a starter of lightly smoked chalk steam trout with beetroot and crème fraîche by Port Lympne’s executive head chef Lee Edney and a fish course of wild halibut, Jerusalem artichoke and seaweed-pressed potato from The Dog at Wingham.

Allister Barsby, head chef at the AA Rosette-awarded fine-dining restaurant Hide and Fox, has come up with the main course. Diners can enjoy a dish of Kent marsh lamb loin, lamb fat carrot, goat’s curd and black garlic.

“I am excited to showcase my cuisine during this pop up at Port Lympne,” says Allister. “Kent is known for its marsh lamb, so I felt it was a must for the main course. Kent is also the home of UK wine-making, so it makes sense to pair all this wonderful food with wines from our friends over at Gusbourne. It will be a wonderful event and I can’t wait to get stuck in.”

The final course of chocolate mousse, salted almonds, pear compote and sorbet is once again from Port Lympne’s own kitchen.
