Summer holidays enjoying delicious dishes in some foreign resort may still be some time off, but you can have an early fix with new book The Olive Tree Kitchen.
Celebrating traditional Greek cookery, it includes 66 recipes lovingly reproduced to cook
in your own kitchen by taverna owner and chef Lakis Bouas and Kent journalist Jeff Fuidge.
Fuidge, who works at the KM Group’s Whitstable office, not only designed the book but cooked and photographed each recipe as well.
Three years in the making, The Olive Tree Kitchen includes Greek staples such as kleftiko, stifado and souvlaki, as well as some delicious recipes you won’t find in many, if any, holiday resort tavernas.
That is, of course, except for the Olive Tree taverna in the bustling resort of Tsilivi on the island of Zakynthos (known to many as Zante), which is run by Lakis.
Many recipes have been handed down the generations of his family and some include stories of growing up on Corfu and why those recipes hold a special memory for the 50-year-old chef.
They include 16 vegetable dishes, as well as fish, beef and lamb dishes, desserts and many more. The ingredients are easy to find in the UK and the methods are simply explained.
